Honestly with both of us traveling for all of May, the closest we came cooking at our house for most of the month was ordering a pizza and wings. However, Memorial Day weekend came and thanks to a long weekend and the desire to eat something not off a menu, I managed to cook and bake.
#1 New Potato Salad - Let's just say this was a combination of mustard and vinegar, with your typical potato salad ingredients but it was bland and dry. I'm not even going to post the recipe because no one should try this!
#2 Strawberry Lemonade Pie - Not only was this delish but I think it also made up for the bad potato salad.
A combination of sweetened condensed milk, eggs, sugar and fresh lemon juice and zest. Topped with strawberries marinated in lemon juice and topped with cool whip. All in a graham cracker crust. I have to say that this is just about the perfect hot weather cookout dessert! Plus the filling is gluten free!
