Recipes for February

February is the month of Valentine's and so I thought it would be only appropriate to share our Valentine's meal.  With both of us traveling seperately the week before the holiday and Alan gone again the week of Valentine's we opted to celebrate on Sunday before Valentine's and do something we really enjoy, cook a new meal together.  I chose the entree and desert, Alan chose the appetizer and salad, we made a trip to the market to gather all the ingredients for our feast, then we opened a bottle of wine and went to town!

Dinner consisted of Salmon Sashimi, Seafood Salad, Thai Basil Chicken and Chocolate Fondue for dessert.

Salmon Sashimi is one of our favorite things in the world and after spending time in Japan we are super picky when it comes to fish, this one did not disappoint!  Next was the seafood salad, a combination of different seafood along with lemongrass, ginger, thai peppers, fish sauce, soy sauce and mint.  Wow, what a combination, summer in a bowl!  Next was the Thai Basil Chicken, a dish I recently fell in love with.  We tried a recipe we found but made our own alternations to it.  The sauce wasn't quite there but other than that it was spot on, delish!  And who doesn't like Chocolate Fondue?  Dark Chocolate with strawberries, bananas and marshmallows. 

It was a great way to celebrate Valentine's and finally spend some time together!
